Last Minute Training and Cinnamon Muffins

7 Jan

The OC Throwdown is 2 days away and we learned what the work outs were last night. The first WOD has clean thrusters in it but the weight is pretty light for me so I’m ok there but if I make it to the final round the WOD is: you have 5 minutes to get a 1 rep max clean. So today I was already scheduled for my Olympic Lifting training session at Mike’s Gym with Coach Ashley so when I got there I gave her the news about the WOD and we starting working on my clean from the high hang position. I really need to focus on my speed and turning over those elbows. I also need to stay tight and make sure I finish with my shoulders up and not back. I felt a lot better after we worked on this. I tend to get scared of the bar when I get over 100lbs on it because basically you are lifting the bar in the air and then pulling yourself under it to catch it. Now in reality you are jumping under 100lbs as it is crashing to the floor and why someone would want to do that is beyond me 🙂 .

I have to take this moment to give a shout out to my trainer Ashley who is moving up to LA to attend college at UCLA. I’m really happy for her as she ventures off on her journey toward her future career. She will still be training up there and she said today she wants to go to the Arnold Weightlifting Championships. Good Luck Ashley in all that you do!!! WOOT WOOT!

Cinnamon Muffins

I have wanted to make these gluten-free cinnamon muffins that I got off Elana’s Pantry. You have to try them, I think they are amazing! But there are a couple changes I would make.

When you make the cinnamon topping stuff I would double it. I found later when eating the muffins that the cinnamon really made them and it didn’t go to far on all of them so it could use a bit more.

I also added Blueberries. I love Blueberries so it just seemed natural to add them and let me tell you it was like heaven! I had some blueberries in the freezer so I added frozen ones but fresh will work also. I used about 1 cup. I also cooked them a little longer than recipe said to but I think if you add a little more flour it might soak up some of the liquid. You can play around with that.

So there you have it. A great sweet treat that is easy on the insulin and paleo friendly. Click on the link above for the recipe. Happy Eating!!
